Wildwood Corn Bread from the Wildwood Restaurant in Portland, Oregon 1 c. flour 1 c. yellow Cornmeal 1/4 c. brown sugar 1 tbs. baking powder 1 tbs. salt (cut this to 1 1/2 tsp.) 1/2 tsp. baking soda 1/2 c. milk 1/2 c. buttermink 3/4 c. sour cream 2 large eggs 1/4 c. vegetable oil (Optional : 1/2 to 1 tsp. cayenne pepper) Preheat oven to 375 degrees. Grease a 9 inch square pan. In a large bowl, mix all the dry ingredients. In a medium bowl, mix all the wet ingredients. Add wet ingredients to the dry ingredients. Mix until dry is moistened; the batter will be slightly lumpy. Pour batter into greased pan. Bake for 20 to 25 minutes or until toothpick comes out clean. Cut into 8 portions and serve.
